How long have you been going?
The bakery has been operating since 2010. I started it in a restaurant kitchen in Cotham, which we quickly outgrew. It has taken nearly a year to find the right site to make our permanent home but as soon as I saw Arch 35 I knew it was the right place!

Why did you decide to set this business up?
After many years working as a baker and pastry chef in Bristol I saw an opportunity to open a small bakery where everything was made and sold on site so the customers could feel involved with the baking process.

What is the business?
We are a small artisan bakery specialising in sourdough bread and pastries. We make everything from scratch using quality ingredients and traditional methods. The bakery is very open plan and customer get to buy bread straight from the oven. We also have a few seats where you can enjoy a cup of coffee with your croissant and watch the bakers at work. We supply a number of shops, restaurants and cafés in Bristol as well as running regular bread making workshops.

Any quirky/interesting facts about it, interesting people or projects you’ve worked with/on?
The bakery is situated in a Victorian railway arch underneath the front of Temple Meads station. It has previously been a recording studio, car cleaning business and a bondage dungeon so we are very glad to add bakery to its history!

How many people are there in your business?
At the moment we are still growing the business but currently employ 3 people as well as offering apprenticeship positions and training roles.

Why have you chosen to relocate to Bristol Temple Quarter Enterprise Zone?
We chose this site for the bakery as I was really inspired by the new initiatives happening in the Enterprise Zone. It has a great energy and it’s exciting to see so many new and small businesses start up here alongside the bigger, more established companies. There is a real sense of community already and we’d love the bakery to be at the heart of that- somewhere to pop in early in the morning, meet a client or hold a meeting. We have been made to feel so welcome already and really enjoying getting to meet all our new neighbours. We look forward to growing with the area and adapting to the needs of the people in it.

What do you want to see happening in Bristol Temple Quarter Enterprise Zone?
It would be great to see more independent retail business in the area to encourage a wider audience beyond the people that work or travel through here particularly at weekends and encourage people to stay a bit longer.
